In a medium bowl, whisk together the white wine vinegar, dijon mustard, honey, salt and black pepper and add the olive oil one tablespoon at a time until a creamy emulsion forms.2. Place the salad leaves on a plate and add smoked salmon, torn dill, goats cheese dollops, cherry tomatoes and sliced red onions3. In a large skillet over medium heat, combine the oil, the garlic, the pepper flakes, the anchovies and the capers. Cook for 5 minutes, stirring occasionally, until fragrant. Add the reserved pasta water and bring to simmer.3. Add the pasta and the olives (if using) and stir for 3-4 minutes. 4. Off the heat, stir in the lemon zest and juice, the caper brine, the parsley and half of the cheese. In a medium heavy-bottomed saucepan set over medium-high heat, combine the rhubarb, orange juice, sugar and orange zest. Bring to a boil, stirring occasionally, then reduce heat to low and simmer for 10 minutes, or until rhubarb is soft and beginning to fall apart. Set aside to cool off to room temperature2. In a large mixing bowl, whip together the heavy cream, yoghurt, sugar and vanilla until soft peaks form3. Break the meringue nests into a large bowl and top with rhubarb compote and your cream mixture.4.
